Abstract
Betawi cuisine is an inseparable part of Indonesia's culinary richness that has a long history and distinctive taste. In this abstract, we explain the characteristics, variations, and significance of Betawi cuisine in Indonesian culinary culture. Betawi cuisine includes a variety of dishes, such as Gado-gado Betawi, Nasi Ulam, and Slendang Mayang, which are a harmonious combination of local ingredients with traditional cooking techniques. The uniqueness of this food lies in the use of aromatic spices and special sauces that distinguish it from other regional cuisines. In addition, Betawi cuisine also reflects the diversity of Indonesian culture with influences from various ethnicities and cultures in Jakarta. This abstract discusses the importance of maintaining and promoting Betawi cuisine as part of a cultural heritage that needs to be preserved and developed. This study aims to determine the taste and appearance of innovated Betawi cuisine. The author uses qualitative data collection techniques by searching for sources from journals, trusted articles and conducting experiments.
